So here we have the "Rosa de Sant Jordi", named after the Barcelona celebration of Saint Jordi that is associated with giving roses. However, by this point the 15 courses of wine have thoroughly kicked in and neither of us can remember what this dish tasted like, other than to say that the emulsion surrounding the rose is actually cheese. The rest is up to your (and our) imagination.
