Bill and Becky Laughlin gifted us some duck leg confit, so with some duck wing and goose confit that we already had in the freezer, it was time to make a wintery tummy-warmer of cassoulet. It also allowed us to break-in our new Staub dutch oven. Lots'o yummy tummy-filling goodness!

Cassoulet-002 Filled to the brim with duck, goose, pork belly, bacon ends, and herb sausage. Hard to be in the house for the several hours that the cassoulet had to simmer.
